Drinks--All Booze Free For The Safety Conscious
Eggnog
8 whole eggs
8 tablespoon superfine sugar
pinch salt
2 teaspoons vanilla
4 cups milk
nutmeg
Beat the egg with the sugar and salt. Add vanilla and milk and stir to
mix. Grate a little nutmeg on top.
If there is a Salmonella problem with the eggs in your region, do not prepare
this recipe. Boiling and cooling make this recipe inedible, unfortunately.
Orange Hot Chocolate
4 cups milk
8 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
6 2x1-inch orange peel strips (orange part only)
1 teaspoon instant coffee powder
1/4 teaspoon ground nutmeg
Combine all ingredients in heavy medium saucepan. Stir over low heat until
chocolate melts. Increase heat and bring just to boil, stirring often.
Remove from heat and whisk until frothy. Return to heat and bring just
to boil again. Remove from heat; whisk until frothy. Repeat heating and
whisking once again. Discard orange peel. (Can be prepared 2 hours ahead.
Let stand at room temperature. Before serving, bring just to boil, remove
from heat and whisk until frothy.) Pour hot chocolate into mugs.
